The Bar

West’s beautiful cherry wood bar sits facing a custom designed wall of wine, home to the thousands of bottles that make up West’s highly awarded six hundred label wine collection.  Complete with sliding library ladders, the wall has been installed with a unique cooling system whereby cool air is pushed through the individual bins from the back, maintaining bottles within one degree of optimum storage temperatures.  Thirty-wines are available by the glass, including six choices of champagne sparkling wines; the perfect start to the evening.

Classic martinis and inspired contemporary cocktail creations are crafted from fresh ‘squeezed to order’ citrus juices, with premium spirits and fragrant garnishes. 

The full dinner menu, dessert and cheese menu are available at the bar alongside a selection of small plates designed for lighter appetites and snacking.



Bar Manager  

David Wolowidnyk has amassed over nineteen years of professional service experience from a variety of leading bars and restaurants; from Seasons in the Park and La Ventana Restaurant  in Vancouver to The Grand Cayman Islands where he was responsible for setting up service standards and establishing the bar program at The Brasserie Restaurant and also for consulting to The Baccus Wine Bar.  He returned to Vancouver to manage Lucy Mae Brown, before joining the team at West.

Wolowidnyk attributes diversity of skills, attention to detail and extensive product knowledge to running a successful bar; in addition he says it must be immaculately maintained and always well stocked.  At West he trains his staff to give individual attention to guests; to seek out their preferences and offer suggestions from a tempting range of contemporary and classic cocktails, an array of premium sprits, an extensive wine selection and a choice of draft and bottled beers.  His pleasure comes from seeing happy customers leave with memorable experiences.  He enjoys working with a team of like-minded professionals that inspire creativity and share his passion for food and wine.  His ambition is to always challenge himself to go well beyond the expectations of both his colleagues and his guests.
